Caldo Verde hits all the right notes



Has winter kicked your family into submission yet?

It has in my house and I have been craving hearty and warm soups to keep sore throats happy and tummies full.

Through what could possibly be kindly described as an extended research session yesterday (*cough* doom scroll *cough*), I came across a beautiful influencer creating a stunning-looking soup called Caldo Verde.

It’s basically a potato and kale soup plus some sliced chorizo, hello, you have my attention!

Popular in Portugal caldo verde is Portuguese for ‘green broth’ and the basic traditional ingredients include julienned collard greens, potatoes, olive oil, black pepper and salt, and is flavoured with onion and garlic.

Served with slices of chorizo or other flavoured sausages, the video I saw online cooked its chorizo first and then sauteed a fabulous amount of onion and garlic in the chorizo oil.

There are TONS of variations of this online, but measure with your heart and what’s available on the day. It was simple, tasty and most importantly – everyone ate it.

Caldo Verde – served roughly 4 (two adults and two kids!)

Ingredients:

2 tablespoons stock powder (Chicken or vegie)

1 brown onion, diced

4 cloves of garlic, crushed

Oil for frying (or use the sausage oil)

2 Chorizo sausages, sliced

3 medium potatoes, any variety, sliced, skin on or off as desired

2 cups of thinly sliced kale

Pepper to taste

Recipe:

Fry your chorizo till golden brown or slightly crunchy, which is how we roll in our house

Reserve oil in pot, put chorizo aside and try not to eat it all before the soup is done

Sauté your onions and garlic for a few minutes until softened

Add the sliced potato, a few cups of water (about a litre?) and stock powder

Bring to a boil and give it a solid twenty for the potato to cook

Whiz up the soup with a stick blender

Add kale ribbons and cook a few more minutes

Serve in bowls with as much chorizo as you fancy and some sliced bread and butter for dipping. It could easily be served as a starter or main.
